Hot food releases water vapor. In a tightly closed package, that vapor condenses on the lid and walls, then falls back onto the food. Fried coatings, bread, pastry and roasted surfaces lose crispness quickly when trapped with moisture.
Opening a vent can release steam, but venting is not automatically better for every dish. Soup and curry need strong spill control. Rice and roasted meat may dry out if ventilation is excessive. Test at least three samples of each candidate SKU. Use production food, not water alone.
1. Define the real service condition
Record the food, portion weight, fill temperature, sauce or oil content, container model, lid model, vent state, bag type, stacking pattern and target travel time. If a delivery platform typically takes 35 minutes, do not approve packaging after a five-minute countertop check.
2. Create controlled comparison groups
Compare one variable at a time. For example:
- sealed lid versus vented lid;
- food and sauce together versus sauce in a separate cup;
- one compartment versus divided compartment;
- immediate packing versus a short steam-release rest;
- single container versus three-container stack.
3. Simulate the route
Place the packed food in the same paper or insulated delivery bag used in service. Include realistic stacking and gentle movement. Inspect at 15, 30, 45 and 60 minutes without repeatedly opening every sample.
4. Score what the customer experiences
Use a simple 1–5 score for:
- lid security and visible leakage;
- base or lid deformation;
- condensation;
- crispness or texture;
- sauce separation;
- food appearance;
- serving temperature;
- ease of opening without spills.
Photograph each checkpoint. A documented comparison is more useful than “the new container feels stronger.”
